Nastao je u 18. stolje\u0107u, s po\u010detkom upotrebe paprike kao za\u010dina, u Ma\u0111arskoj, a svoje korijene je ostavio i u Slavoniji. Iako se u ma\u0111arskoj kuhinji priprema od piletine, svinjetine ili srnetine u Slavoniji se mo\u017ee na\u0107i s rije\u010dnom ribom. Mi ga donosimo u kombinaciji sa smu\u0111em. Izvrsnu aromu mu daju mljevene paprike i slanina, a okus zaokru\u017euje prilog od \u0161irokih rezanaca sa svje\u017eim kravljim sirom i vrhnjem. <!--more-->[one_third]<\/p>\n<h4>Sastojci<\/h4>\n<p>1 kg smu\u0111a<br \/>\n2 \u017elice ulja<br \/>\n40 g slanine<br \/>\n250 g luka<br \/>\n1 ravna \u017elica soli<br \/>\n1 \u017elica slatke dimljene paprike u prahu<br \/>\n\u00bd \u017elice ljute paprike u prahu<br \/>\n50 ml pasirane raj\u010dice<br \/>\n50 ml bijelog vina<\/p>\n<h4>Za prilog:<\/h4>\n<p>320 g \u0161irokih rezanaca<br \/>\nsol<br \/>\n160 g svje\u017eeg kraljeg sira<br \/>\n100 ml kiselog vrhnja<br \/>\n[\/one_third]<br \/>\n[two_third_last]<\/p>\n<h4>Priprema<\/h4>\n<p>Smu\u0111a o\u010distite, operite, nare\u017eite odreske i uklonite sredi\u0161nju kost. Slaninu nare\u017eite na sitne kockice. Luk ogulite i sitno nasjeckajte.<\/p>\n<p>U \u0161irokoj posudi na zagrijanom ulju popecite slaninu. Dodajte luk i popecite sve zajedno 10-tak minuta. Zatim dodajte sol, paprike u prahu i nastavite pirjati uz povremeno dodavanje vode dok ne dobijete gustu i jednoli\u010dnu masu (40-50 minuta pirjanja).<\/p>\n<p>Narezanog smu\u0111a prelijte pasiranom raj\u010dicom i dobro promije\u0161ajte. Rasporedite ga na pirjani luk, prelijte s malo vode (tek toliko da prekrije ribu) i nastavite pirjati 15 minuta. Pred kraj kuhanja ulijte bijelo vino.<\/p>\n<p>Za prilog, skuhajte \u0161iroke rezance u blago posoljenoj vodi i ocijedite.
