U gradovima Palermo, Siracusa i Trapani na Siciliji, arancini su tradicionalna hrana za blagdan Santa Lucije 13. prosinca kada se ne jedu kruh i tjestenina. Iako su najtipi\u010dniji oni od mljevenog mesa u umaku od raj\u010dice s mozzarellom u sredini, danas ih pronalazimo u bezbroj varijanti. Ovu s repovima kozica pokazao nam je na\u0161 chef Berislav Lackovi\u0107 na jednoj od radionica u Kuhaoni.<!--more-->[one_third]<\/p>\n<h4>Sastojci<\/h4>\n<p>100 g kozica<br \/>\n1 ljutika<br \/>\n2 \u010de\u0161nja \u010de\u0161njaka<br \/>\nmaslinovo ulje<br \/>\n100 g arborio ili carnaroli ri\u017ee<br \/>\n50 ml bijelog vina<br \/>\n20 g maslaca<br \/>\n30 g ov\u010djeg sira<br \/>\nkurkuma<\/p>\n<p>mediteranske trave (ru\u017emarin, bosiljak, timijan)<br \/>\nulje za pr\u017eenje<\/p>\n<h4>Za paniranje:<\/h4>\n<p>glatko bra\u0161no<br \/>\n2 jaja<br \/>\nkru\u0161ne mrvice<br \/>\n[\/one_third]<br \/>\n[two_third_last]<\/p>\n<h4>Priprema<\/h4>\n<p>Kozicama odvojite rep od glave i izvadite meso repova iz oklopa. Od glave i oklopa skuhajte temeljac.<\/p>\n<p>Luk i \u010de\u0161njak o\u010distite i sitno nasjeckajte. Na malo maslinova ulja prodinstajte luk i \u010de\u0161njak dok ne dobiju boju, dodajte ri\u017eu i kratko je tostirajte. Prelijte vinom i dodajte kurkumu. Mije\u0161ajte i podlijevajte temeljcem dok ri\u017ea ne bude kuhana.<\/p>\n<p>Na maslinovu ulju kratko popecite kozice.<br \/>\nRi\u017eu malo ohladite i za\u010dinite mediteranskim travama.
