Razlikujemo buzaru na bijelo koja se priprema od \u010de\u0161njaka, luka, per\u0161ina, maslinova ulja i vina i buzaru na crveno s dodatkom raj\u010dice. <!--more-->Kad je buzara pri kraju pripreme mo\u017eete je ostaviti rijetku, \u010diste teksture i okusa ili je zgusnuti dodavanjem kru\u0161nih mrvica.<br \/>\n[one_third]<\/p>\n<h4>Sastojci<\/h4>\n<p>1,5 kg dagnji<br \/>\n2 glavice luka<br \/>\n4-5 \u010de\u0161nja \u010de\u0161njaka<br \/>\n2-3 listi\u0107a ku\u0161a (kadulje)<br \/>\n1 vezica per\u0161ina<br \/>\n100 ml maslinova ulja<br \/>\n1 \u017elica kon\u0161erve (koncentrata raj\u010dice)<br \/>\ngran\u010dica ru\u017emarina<br \/>\n200-300 ml vode<br \/>\n2-3 \u017elice kru\u0161nih mrvica<br \/>\n300 ml malvazije<br \/>\n[\/one_third]<br \/>\n[two_third_last]<\/p>\n<h4>Priprema<\/h4>\n<p>Dagnje ostru\u017eite od vapnenastih naslaga i kudeljastih vlakana te dobro operite od pijeska. Odbacite sve one s napuklom ili otvorenom \u0161koljkom. Za pripremu, dagnja mora biti \u017eiva, odnosno \u010dvrsto zatvorena.<\/p>\n<p>Luk, \u010de\u0161njak, ku\u0161 i per\u0161in sitno nasjeckajte.<\/p>\n<p>U ve\u0107oj, \u0161iroj zdjeli zagrijte ulje, pa na njemu popirjajte luk. Dodajte kon\u0161ervu i ru\u017emarin, pa kad luk malo omek\u0161a, dodajte \u010de\u0161njak i dio nasjeckanog per\u0161ina. Nakon toga dodajte pedo\u0107e, dolijte vode i poklopite, pa kuhajte kako bi se dagnje otvorile.<\/p>\n<p>Tek kad se dagnje otvore pospite s\u00a02-3 \u017elice kru\u0161nih mrvica. Dolijte vino, poklopite i kuhajte jo\u0161 najvi\u0161e 10 minuta na laganoj vatri. Povremeno protresite zdjelu.
